Natural, Washedともにクラシカルな方法でプロセスをしたものです。
Naturalについては収穫から加工までの間に「自然」に起こる発酵に加えて、いかなる発酵工程も経ていません。アフリカンベッドで約11日間休ませ、ゆっくりと予備乾燥を行い、最後に暗室で22日間の乾燥を行います。
Both Natural and Washed are processed using the classical method.
Natural coffee does not undergo any fermentation processes beyond the fermentation that occurs "naturally" from harvest to processing. It is rested on African beds for approximately 11 days, slowly pre-dried, and finally dried in a dark room for 22 days.

Hartman is a coffee farm in Santa Clara, in the Renacimiento region of western Panama, that has been growing coffee for three generations.

Since its founding, the farm has continued to grow coffee with a consistent philosophy and passion: respecting nature and the land, and growing coffee with harmony with the environment as its top priority. Hartman does not cut down trees, but instead plants native seedlings and other plants, maintaining the natural cycle, rich soil, and ecosystem. Farm owners Lativar and Tessie Hartman personally select and source the highest quality lots from Mi Finquita, a farm plot created based on their project. In 2020, Hartman Farm won the Geisha category at Best of Panama, and has since established itself as a brand that produces the highest quality coffee in the world.
